Ingredients:

  • 1 Cup urad dal (black gram lentils)
  • 1/4 Cup chana dal (split Bengal gram)
  • 1 Large onion, finely chopped
  • 2 Large tomatoes, pureed
  • 1/2 Cup ginger-garlic paste
  • 2 Green chilies, finely chopped
  • 1 Teaspoon cumin seeds
  • 1/2 Teaspoon turmeric powder
  • 1 Teaspoon red chili powder
  • 1 Teaspoon coriander powder
  • 1 Teaspoon garam masala
  • Salt to taste
  • 4 Cups water
  • Fresh coriander leaves for garnish
  • Ghee for tempering

Instructions:

  1. Start by rinsing the urad dal and chana dal under cold water. Soak them together in sufficient water for at least 4-6 hours or overnight. This helps in softening the lentils and reducing the cooking time.
  2. In a Pressure Cooker, combine the soaked and drained lentils with 4 cups of water. Add turmeric powder, salt, and pressure-cook until the lentils are soft and well-cooked.
  3. In a separate Deep Pan or Kadhai, heat ghee or oil. Add cumin seeds and let them splutter. Add finely chopped onions and sauté until golden brown. Stir in the ginger-garlic paste and green chilies, cooking until the raw aroma disappears. Add pureed tomatoes and cook until the oil starts to separate.
  4. Introduce the spices - red chili powder, coriander powder, and garam masala. Cook the masala mix until it releases a rich aroma, enhancing the flavors.
  5. Once the lentils are cooked, combine them with the prepared masala mixture. Simmer on low heat for an additional 10-15 minutes, allowing the flavors to meld.
  6. In a Small Pan, heat ghee for tempering. Add cumin seeds and let them sizzle. Pour this tempering over the dal for an added layer of richness and aroma.
  7. Garnish the Amritsari Dal with freshly chopped coriander leaves. Serve it hot with steamed rice or your favorite Indian bread - naan or roti.
