Savoring Maharashtrian Flavors: Marathi Alu Vadi Patra Recipe

Embark on a culinary journey through Maharashtra with our authentic Marathi Alu Vadi Patra recipe. Ingredients:

  • Colocasia leaves (Arbi ke Patte)
  • Besan (Gram Flour) - 1 cup
  • Tamarind pulp - 2 tablespoons
  • Jaggery - 4 tablespoon
  • Mustard seeds - 1 teaspoon
  • Sesame seeds - 2 tablespoons
  • Turmeric powder - 1/2 teaspoon
  • Red chili powder - 1 teaspoon
  • Asafoetida (Hing) - a pinch
  • Salt - to taste
  • Oil - 3 tablespoon
  • Crushed peanuts - 2 tablespoons
  • Rice flour - 4 tablespoons
  • Wheat flour - 2 tablespoons

For the Tempering:

  • Mustard seeds - 1 Teaspoon
  • Sesame seeds - 1 Teaspoon
  • Curry leaves - a few
  • Grated coconut - for garnish (optional)

Instructions:

    1. Wash and pat dry the colocasia leaves. Trim the edges and remove the central vein if it's too thick. Keep aside.
    2. Soak tamarind in 1 cup of water and extract its pulp.
    3. In a mixing bowl, mix besan, rice flour, wheat flour, tamarind pulp, jaggery, mustard seeds, sesame seeds, crushed peanuts, turmeric powder, red chili powder, asafoetida, salt, and oil. Add water gradually to form a smooth batter.
    4. Heat oil in a Pan or Kadhai and add the mixture. Cook until it thickens, stirring constantly.
    5. Lay out each colocasia leaf and spread a thin layer of the batter evenly on each leaf.

  1. Roll the leaves tightly to form a log. Steam the rolls for about 15-20 minutes or until the batter is cooked.
  2. Once steamed, allow the rolls to cool. Cut them into slices. In a Pan, heat oil and add mustard seeds, sesame seeds, and curry leaves. Add the sliced rolls and sauté until they turn golden brown.
  3. Garnish with grated coconut if desired. Serve the Marathi Alu Vadi Patra slices hot as a snack or a side dish.
