Savor the Fast: Kuttu Ka Dosa Recipe for Divine Navratri Delight

Ingredients:

  • 1 Cup Kuttu (Buckwheat) flour
  • 1/2 Cup Singhara (Water Chestnut) flour

  • 1 Teaspoon Cumin Seeds

  • 1 Cup Boiled and mashed Aloo (Potatoes)
  • 1 Green Chili (finely chopped)
  • 1 Teaspoon Ginger (grated)
  • Fresh Coriander leaves (chopped)
  • Sendha Namak (Rock Salt) to taste

Instructions:

  1. In a mixing bowl, combine Kuttu flour, Singhara flour, Samak flour, whisked curd, rock salt, and cumin seeds.
  2. Gradually add water to make a smooth batter with a dosa-like consistency.
  3. Allow the batter to ferment for at least 2-3 hours.
  4. In a separate mixing bowl, mix boiled and mashed potatoes with chopped green chili, grated ginger, chopped coriander leaves, and sendha namak.
  5. Heat a non-stick griddle or dosa pan.
  6. Pour a ladle of the batter onto the dosa pan and spread it in a circular motion to make a thin dosa.
  7. Cook until the edges start to lift, and the bottom turns golden brown.
  8. Add a generous spoonful of the potato filling on one side of the dosa.
  9. Fold the dosa over the filling to create a semi-circle or roll it like a wrap.
  10. Cook for another minute until the dosa is crisp and golden.
  11. Repeat the process for the remaining batter.
  12. Serve the Kuttu Ka Dosa hot with your favorite fasting chutney or yogurt.
