Paneer Pasanda: A Delectable Dive into Creamy Goodness

  • 250g paneer (cottage cheese), sliced into thick rectangles
  • 1 Cup yogurt, whisked

  • 1 Cup tomato, pureed
  • 2 Tbsp ginger-garlic paste
  • 1/2 Cup fresh cream
  • 1/4 Cup ghee or butter
  • 1 Tsp red chili powder
  • 1 Tsp turmeric powder
  • 1 Tsp garam masala
  • 1 Tsp cumin powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. In a mixing bowl, mix yogurt, ginger-garlic paste, turmeric powder, red chili powder, and salt.
  2. Coat the paneer slices with this marinade and let them sit for at least 30 minutes.
  3. Heat ghee or butter in a pan. Sear the marinated paneer slices until they turn golden brown on both sides. Set aside.
  4. In the same pan, add more ghee if needed. Add chopped onions and sauté until golden brown.
  5. Add cashew paste and cook until it releases the ghee.
  6. Add tomato puree, cumin powder, and garam masala. Cook until the masala is well-cooked and the oil separates.
  7. Reduce the heat and slowly add fresh cream to the gravy. Stir continuously to avoid curdling.
  8. Place the seared paneer slices in the gravy and let it simmer for 5-7 minutes.
  9. Garnish with fresh coriander leaves.
  10. Serve Paneer Pasanda hot with naan or steamed rice.
