Instant Rava Idli: A Wholesome Delight for Your Palate

Ingredients:

  • 1 Cup semolina (rava)
  • 1 Cup plain yogurt
  • 1/2 Cup water
  • 1/2 Cup mixed vegetables (carrots, peas, cilantro), finely chopped
  • 1/2 Tsp mustard seeds
  • 1/2 Tsp urad dal (black gram)
  • 1/2 Tsp baking soda
  • 1 Tbsp oil
  • Salt to taste

Instructions:

  1. Heat oil in a Deep pan or Kadhai, add mustard seeds and urad dal. Once the seeds splutter, add finely chopped vegetables and sauté until they are slightly tender.
  2. In the same Pan, add semolina and roast until it turns light golden brown. Allow it to cool.
  3. In a mixing bowl, combine roasted semolina, yogurt, water, and the sautéed vegetable mixture. Mix well to form a thick batter. Add salt to taste.
  4. Allow the batter to rest for 15-20 minutes. This helps the semolina absorb the liquid, resulting in softer idlis.
  5. Just before steaming, add baking soda to the batter and mix gently. Ensure that the batter has a smooth consistency.
  6. Grease the idli molds and pour the batter into each mold. Steam the idlis for 12-15 minutes or until a toothpick comes out clean.
  7. Allow the idlis to cool for a few minutes before unmolding. Serve them warm with your favorite chutney or sambar.
