  • 1 Teaspoon Vanilla extract

Instructions:

  1. Preheat your Oven to 350°F (180°C) and grease a round Cake Pan.
  2. In a small Saucepan, melt the butter over medium heat. Add the brown sugar and stir until it dissolves. Pour this mixture into the prepared Cake Pan, ensuring it spreads evenly.
  3. Arrange pineapple slices on top of the caramel mixture in the Cake Pan. If desired, place a maraschino cherry in the center of each pineapple ring.
  4. In a large mixing bowl, whisk together flour, sugar, baking soda, and salt.
  5. In a separate mixing bowl, mix pineapple juice, vegetable oil, apple cider vinegar, and vanilla extract.
  6. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  7. Pour the batter over the pineapple slices in the Cake Pan, spreading it evenly.
  8. Bake in the preheated Oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
