Ingredients:

  • 2 Cups Green Moong
  • 1 Cup rice
  • 2 Green chilies
  • 2 Tablespoons chopped fresh coriander leaves
  • ½ inch ginger piece
  • Salt, to taste
  • ¼ Teaspoon Asafoetida (Hing)
  • Water - as needed (for grinding)
  • Oil or Ghee - for cooking the dosas

Instructions:

  1. Step 1: Wash the moong dal and rice thoroughly and soak them together in water for about 4-6 hours. Soaking softens the lentils and makes the grinding process easier.
  2. Step 2: Drain the soaked moong dal and rice, and transfer them to a blender. Add green chilies, ginger, cumin seeds, Asafoetida, fresh coriander leaves, curry leaves, and a little water. Grind everything to a smooth batter with a consistency similar to regular dosa batter. Add salt to taste and mix well.
  3. Step 3: Transfer the batter to a mixing bowl and whisk it well to aerate the mixture. The aeration enhances the dosa's texture and makes it crispier.
  4. Step 4: Heat a non-stick or cast-iron dosa tawa (griddle) on medium-high heat. Once the tawa is hot, pour a ladleful of the dosa batter onto the center of the tawa. Using the back of the ladle, gently spread the batter in a circular motion to form a thin dosa.
  5. Step 5: Drizzle a few drops of oil or ghee around the edges of the dosa and a little on top. Allow the dosa to cook until the bottom turns golden brown and crisp.
  6. Step 6: Carefully flip the dosa using a flat spatula and cook the other side for a minute or two until it turns golden brown.
  7. Step 7: Once both sides are cooked to perfection, remove the dosa from the tawa and serve it hot with coconut chutney, tomato chutney, or sambar.
