Fasting Made Flavorful: Vrat Special Sabudana Khichdi

During vrat (fasting) days, it's essential to prepare dishes that not only adhere to the fasting guidelines but also provide nourishment and flavor. Ingredients:

  • 1 Cup Sabudana (Tapioca Pearls)
  • 1 Cup Fresh Spinach Leaves, Finely Chopped
  • 1/2 Cup Fresh Coriander Leaves, Chopped
  • 1/4 Cup Fresh Mint Leaves, Chopped
  • 1 Green Chili, Finely Chopped (Adjust to Your Spice Preference)
  • 1/2 Cup Roasted Peanuts, Coarsely Crushed
  • 1 Tablespoon Ghee 
  • 1 Teaspoon Cumin Seeds
  • 1/2 Teaspoon Turmeric Powder
  • Sendha Namak (Rock Salt) or Fasting Salt to Taste
  • Juice of 1 Lemon
  • Fresh Grated Coconut for Garnish (Optional)
  • Chopped Coriander for Garnish

Instructions:

  1. Rinse the Sabudana in a fine-mesh strainer under cold water until the water runs clear. Soak the Sabudana in water, covering it with an inch of water, for at least 4-5 hours or overnight. Drain the excess water and keep the soaked Sabudana aside.
  2. In a blender, combine the spinach, coriander, mint leaves, and green chili. Blend until you get a smooth and vibrant green paste. Set aside.
  3. In a large pan or kadhai, heat the ghee or oil over medium heat. Add the cumin seeds and let them splutter.
  4. Add the green paste to the pan and sauté for 2-3 minutes, allowing the flavors to meld.
  5. Stir in the turmeric powder and season the khichdi with Sendha Namak (rock salt) or fasting salt to taste.
  6. Add the soaked Sabudana to the pan and mix well, ensuring that the green paste coats the Sabudana evenly.
  7. Cover the pan and let the Green Sabudana Khichdi cook on low heat for about 5-7 minutes or until the Sabudana pearls turn translucent and soft.
  8. Stir in the crushed peanuts and drizzle the lemon juice over the khichdi for a burst of tangy flavor.
  9. Garnish with grated coconut (if using) and freshly chopped coriander.
