Ingredients:

For the Boondi (Gram Flour Pearls):

  • 1 Cup gram flour (besan)
  • 1/4 Cup ghee (clarified butter)
  • A pinch of baking soda
  • Water, as needed

For the Sugar Syrup:

  • 1 Cup sugar
  • 1/2 Cup water
  • A few saffron strands (optional)
  • A pinch of cardamom powder

For Assembling the Laddus:

  • Ghee, for greasing
  • Chopped nuts (almonds, cashews, pistachios)
  • Edible silver leaves (optional)

Instructions:

Making the Boondi (Gram Flour Pearls):

  1. In a Mixing Bowl, combine gram flour and a pinch of baking soda.
  2. Gradually add water while whisking to form a smooth, lump-free batter.
  3. Heat ghee in a Kadhai. Using a perforated ladle or slotted spoon, pour small portions of the batter into the hot ghee to make tiny boondi (pearls). Fry until they turn golden and crispy.
  4. Remove the boondi from the ghee and drain on a paper towel.

Preparing the Sugar Syrup:

  1. In a separate Pan, combine sugar, water, and saffron strands (if using). Bring it to a boil, stirring until the sugar dissolves.
  2. Simmer the syrup until it reaches a one-string consistency. Add cardamom powder and mix.

Assembling the Laddus:

  1. Add the fried boondi to the sugar syrup and mix gently, ensuring each boondi is coated.
  2. Allow the mixture to cool slightly. Grease your palms with ghee and shape the mixture into laddus. Press a chopped nut into each laddu for garnish.
  3. If desired, decorate with edible silver leaves for a traditional touch.
