Crispy Delight: Crafting the Perfect Butter Murukku at Home

  • 2 Cups rice flour
  • 1/2 Cup urad dal flour
  • 1/4 Cup unsalted butter (melted)
  • 1 Teaspoon cumin seeds
  • 1/2 Teaspoon sesame seeds
  • A pinch of asafoetida
  • Salt to taste
  • Water (as needed)
  • Vegetable oil

Instructions:

  • In a large mixing bowl, combine rice flour, urad dal flour, melted butter, cumin seeds, sesame seeds, asafoetida, and salt.
  • Gradually add water to form a smooth, pliable dough. Ensure the consistency is not too sticky.
  • Heat vegetable oil in a Deep Frying Pan over medium heat.
  • Take a portion of the dough and place it in a Murukku Press fitted with a star-shaped Jali.
  • Press the dough directly into the hot oil in a circular, spiral motion, forming the murukku sticks. Keep the murukku sticks moderately thin for optimal crispiness.
  • Fry the murukku until they turn a beautiful golden brown, ensuring they are thoroughly cooked and crispy. Maintain medium heat to achieve the perfect crunch without burning.
  • Once fried, carefully remove the murukku from the oil and place them on paper towels to absorb excess oil.
  • Allow the murukku to cool completely before transferring them to an airtight Container.
