One dish that holds a special place on this auspicious occasion is Krishna Janmashtami Special Kheer. This creamy, aromatic rice pudding is a divine treat that symbolizes the sweetness of devotion. In this blog post, we'll guide you through the preparation of this delightful dessert.

Ingredients:

  • 1/2 Cup Basmati Rice
  • 1 Liter Full-fat Milk
  • 1/2 Cup Sugar (Adjust to Taste)
  • 1/4 Cup Condensed Milk (Optional, for Extra Richness)
  • 1/4 Cup Chopped Nuts (Almonds, Cashews, and Pistachios)
  • 1/4 Cup Raisins
  • 1/2 Tsp Cardamom Powder
  • A Pinch of Saffron Strands (Optional)
  • 1 Tsp Ghee (Clarified Butter)
  • A Few Strands of Saffron for Garnish (Optional)
  • Chopped Pistachios and Almonds for Garnish

Instructions:

  • Start by rinsing the Basmati rice in cold water until the water runs clear. Then, soak the rice in enough water for 30 minutes. Drain the soaked rice and set it aside.
  • In a sturdy, heavy-bottomed pan, bring the full-fat milk to a boil over medium heat, stirring frequently to prevent it from sticking to the bottom.
  • Once the milk reaches a boil, add the drained Basmati rice to it. Reduce the heat to low and let it simmer. Remember to stir occasionally to prevent the rice from sticking to the pan.
  • Continue simmering the rice in the milk until the rice becomes soft, and the mixture thickens. This typically takes about 20-25 minutes.
  • Add the sugar and condensed milk (if using) to the rice and milk mixture. Stir thoroughly to ensure that the sugar dissolves completely. Continue to simmer for another 10-15 minutes until the kheer thickens further.
  • Now, it's time to add the chopped nuts, raisins, cardamom powder, and saffron strands (if using). Let the kheer simmer for a few more minutes until the nuts become soft and plump.
  • In a separate small pan, heat the ghee and lightly roast a few strands of saffron until they become fragrant. Pour this saffron-infused ghee into the kheer and stir gently.
  • Allow the kheer to cool to room temperature, during which it will naturally thicken. If you prefer a chilled dessert, refrigerate it for a few hours. Just before serving, garnish with chopped pistachios and almonds.
  • Present this Krishna Janmashtami Special Kheer as prasad during your Janmashtami celebrations or serve it as a delightful dessert to commemorate this sacred occasion.
