Taste of Tradition: Aam ka Achaar Recipe

  • 4-5 Raw Mangoes (Preferably Firm And Slightly Sour)
    2 Tablespoons Mustard Seed

  • 1 Tablespoon Nigella Seed (Kalonji)
  • 1 Tablespoon Turmeric Powder
  • 1 Tablespoon Red Chili Powder (Adjust According To Your Taste)
  • 1 Tablespoon Asafoetida (Hing)
  • 1 Cup Mustard Oil
  • Salt To Taste

Instructions:

  1. Wash the mangoes thoroughly and pat them dry. Cut them into small, bite-sized pieces. You can keep the skin on or peel it, depending on your preference.
  2. In a large mixing bowl, add the mango pieces and sprinkle salt over them. Toss them gently and set them aside for about 4-5 hours. This step helps in drawing out excess moisture from the mangoes.
  3. After the mangoes have marinated, prepare the spice mix. In a small skillet, dry roast the mustard seeds, fenugreek seeds, fennel seeds, and nigella seeds until they release a fragrant aroma. Allow them to cool down and then grind them into a coarse powder.
