Bright, clean, and refreshing, this Fresh Lime Sorbet is a light frozen treat made without cream or eggs. Fresh lime juice is combined with a simple sugar syrup, chilled, and churned in your Rasoishop Ice Cream Maker for a smooth, refreshing sorbet.
Ingredients
- ✔ 250 ml Fresh lime juice - about 12 limes
- ✔ 400 ml Water
- ✔ 200 g Sugar
- ✔ Zest of 2 limes
- ✔ A pinch of salt
Instructions:
- ✔ Juice the limes: Use the citrus juicer attachment to press the fresh limes. Strain the juice to remove excess pulp.
- ✔ Make the sugar syrup: Combine the water and sugar in a saucepan and heat gently until the sugar has completely dissolved. Do not boil the mixture. Allow the syrup to cool completely.
- ✔ Mix the sorbet base: Combine the cooled syrup with the fresh lime juice, lime zest, and a pinch of salt. Stir well and refrigerate for about 2 hours until thoroughly chilled.
- ✔ Churn in the ice cream maker: Pour the chilled lime mixture into your Rasoishop Ice Cream Maker and churn for about 20 minutes. Sorbet will usually remain softer than ice cream immediately after churning.
- ✔ Freeze: Transfer the sorbet to a freezer-safe container and freeze for at least 4 hours to firm it up.
Sorbet Tip
Because sorbet contains no dairy fat, it freezes harder than traditional ice cream. Move it from the freezer to the refrigerator for about 10 minutes before serving for an easier-to-scoop texture.
