Kothimbir Vadi: A Scrumptious Maharashtrian Delight!

Ingredients:

  • 1 Cup Chopped Fresh Coriander Leaves (Kothimbir)

  • 2-3 Tablespoons Rice Flour
  • 1 Tablespoon Ginger-garlic Paste

  • 1 Teaspoon Mustard Seeds
  • 1/2 Teaspoon Turmeric Powder
  • 1/2 Teaspoon Red Chili Powder 
  • 1/2 Teaspoon Garam Masala
  • A Pinch of Asafoetida (Hing)
  • 1 Tablespoon Sesame Seeds
  • 1 Tablespoon Oil
  • 1/2 Cup Water
  • Salt to Taste
  • Oil for Shallow Frying

Instructions:

  1. In a mixing bowl, combine the besan, rice flour, ginger-garlic paste, turmeric powder, red chili powder, garam masala, and salt. Mix well to form a smooth, lump-free batter.
  2. Add chopped coriander leaves to the batter and mix until they are evenly coated with the spices.
  3. In a pan, heat one tablespoon of oil. Add cumin seeds and mustard seeds. Let them splutter, and then add a pinch of asafoetida and sesame seeds.
  4. Pour the tempering over the coriander-besan mixture and mix thoroughly.
  5. Gradually add water to the mixture and stir until it forms a thick, pourable batter.
  6. Grease a plate or a shallow pan with oil. Pour the batter onto the greased plate and spread it evenly.
  7. Allow the batter to set for about 15-20 minutes.
  8. Once the batter has set, cut it into square or diamond shapes.
  9. In a non-stick pan, heat oil for shallow frying. Place the cut Kothimbir Vadi pieces in the hot oil.
  10. Fry the Vadi on medium heat until they turn golden brown and crispy on both sides.
  11. Remove the fried Kothimbir Vadi from the pan and place them on a paper towel to absorb excess oil.
