Dhokla, a beloved Indian snack, gets a vibrant makeover in this tri-color rendition that's not only a treat for the palate but also a feast for the eyes. Perfect for special occasions, festivals, or simply to add a burst of color to your table, tri-color dhokla is a delightful combination of flavors and aesthetics. In this blog post, we'll guide you through the steps of creating this visually appealing and delicious dish that's sure to impress your guests.

Ingredients:

  • 1 Cup Besan (Chickpea Flour)
  • 1/2 Cup Suji (Semolina)
  • 1/2 Cup Yogurt
  • 1 Teaspoon Ginger-green Chili Paste
  • A Pinch of Turmeric Powder
  • Salt to Taste
  • 1 Teaspoon Fruit Salt (Eno)
  • Spinach puree (from blanched spinach leaves)
  • Carrot puree (from blanched carrots)
  • 2 Tablespoons Oil
  • 1 Teaspoon Mustard Seeds
  • 1 Teaspoon Sesame Seeds
  • A Pinch of Asafoetida (Hing)
  • Curry Leaves
  • Fresh chopped coriander leaves
  • Grated coconut

Instructions:

  1. Prepare the batter by mixing besan, suji, yogurt, ginger-green chili paste, turmeric powder, and salt in a bowl. Add water as needed to make a smooth batter.
  2. Divide the batter into three equal parts. Leave one part as is for the white layer. Mix spinach puree with another part for the green layer, and carrot puree with the third part for the orange layer. Adjust consistency if needed.
  3. Grease a steamer tray or thali. Start with pouring the white batter as the base layer. Steam it for about 10 minutes until it's partially cooked.
  4. Once the white layer is set, pour the green batter on top of it and steam for another 10 minutes.
  5. Finally, pour the orange batter on the green layer and steam for another 10-12 minutes or until a toothpick inserted comes out clean.
  6. Let the dhokla cool for a while, then cut it into squares or diamond shapes.
  7. For tempering, heat oil in a small Pan. Add mustard seeds, sesame seeds, asafoetida, and curry leaves. Let them splutter.
  8. Pour the tempering over the cut dhokla pieces.
  9. Garnish with chopped coriander leaves and grated coconut.
