Sabudana Chivda: A Fasting Delight
Sabudana, also known as tapioca pearls, is a popular ingredient during fasting days due to its versatility and ease of preparation. Ingredients:

  • 1 Cup Sabudana (Tapioca Pearls)
  • 1/4 Cup Peanuts
  • 1/4 Cup Cashews
  • 1/4 Cup Raisins
  • 2-3 Green Chilies, Chopped
  • A Sprig of Curry Leaves
  • 1 Tsp Cumin Seeds
  • 1/2 Tsp Red Chili Powder 
  • Rock Salt (Sendha Namak) to Taste
  • 2 Tbsp Oil
  • Fresh Coriander Leaves, Chopped (for Garnish)

Instructions:

  1. Wash the sabudana thoroughly under running water until the water runs clear. Soak the sabudana in water for 4-6 hours or until they become soft and translucent. Drain any excess water.
  2. In a pan, heat the oil over medium heat. Add the peanuts and cashews and roast them until they turn golden brown. Remove them from the pan and set them aside.
  3. In the same pan, add cumin seeds, chopped green chilies, and curry leaves. Sauté for a minute until fragrant.
  4. Add the soaked and drained sabudana to the pan. Mix well to combine with the tempering.
  5. Add the red chili powder and rock salt to the sabudana mixture. Mix gently to evenly coat the sabudana with the spices.
  6. Continuously stir and roast the sabudana on medium-low heat until they turn crispy and light. This might take around 15-20 minutes. Be patient, as slow roasting ensures even crispiness.
  7. Once the sabudana is crisp, add the roasted peanuts, cashews, and raisins to the pan. Mix well and cook for an additional 2-3 minutes to heat the nuts.
  8. Turn off the heat and let the Chivda cool down to room temperature. Garnish with freshly chopped coriander leaves for a burst of freshness.
  9. Once cooled, transfer the Sabudana Chivda to an airtight container. It stays fresh for a few days, making it an ideal snack for fasting days.
