Ingredients:
- 1 Cup semolina (rava)
- 1 Cup plain yogurt
- 1/2 Cup water
- 1/2 Cup mixed vegetables (carrots, peas, cilantro), finely chopped
- 1/2 Tsp mustard seeds
- 1/2 Tsp urad dal (black gram)
- 1/2 Tsp baking soda
- 1 Tbsp oil
- Salt to taste
Instructions:
- Heat oil in a Deep pan or Kadhai, add Mustard seeds and Urad dal. Once the seeds splutter, add finely chopped vegetables and sauté until they are slightly tender.
- In the same Pan, add semolina and roast until it turns light golden brown. Allow it to cool.
- In a mixing bowl, combine roasted semolina, yogurt, water, and the sautéed vegetable mixture. Mix well to form a thick batter. Add salt to taste.
- Allow the batter to rest for 15 - 20 minutes. This helps the semolina absorb the liquid, resulting in softer idlis.
- Just before steaming, add baking soda to the batter and mix gently. Ensure that the batter has a smooth consistency.
- Grease the idli molds and pour the batter into each mold. Steam the idlis for 12-15 minutes or until a toothpick comes out clean.
- Allow the idlis to cool for a few minutes before unmolding. Serve them warm with your favorite chutney or sambar.
