Eid Special Recipe - Rabri Seviyan Katori

HOW TO MAKE RABRI SEVIYAN KATORI

 Ingredients 

  • 30 ml Ghee
  • 400 Gram Vermicelli Noodles
  • 30 ml Water 
  • 60 Gram Condensed Milk
  • 2 Litre Milk 
  • 65 Gram Sugar
  • 10 Gram Almonds & Pistachios Chopped
  • 1/4 Tsp Cardamom Powder

Method

  1. In a large Skillet, heat the ghee over medium heat.
  2. Add the vermicelli noodles and roast for 5-7 minutes, or until golden brown.
  3. Add the water and mix well. Add the condensed milk and mix well.
  4. Remove from heat.
  5. Take a Cupcake Tray, and add the vermicelli mixture, spreading it out to the sides to form a cup.
  6. Refrigerate for 20-25 minutes.
  7. In a heavy skillet, heat the milk and stir well.
  8. Bring the milk to a boil. Add the condensed milk, sugar, almonds, and pistachios, and mix well.
  9. Bring to a boil again.
  10. Stir frequently to prevent the milk from sticking to the bottom or sides of the pan.
  11. Let the milk simmer on low heat for about 1 hour, or until it has thickened.
  12. Add the cardamom powder and mix well.
  13. Remove from heat and allow to cool.
  14. Refrigerate for 30 minutes.
  15. Remove the katoris from the tray and fill it with the Rabri.
  16. Garnish with pistachios.
  17. Serve and enjoy!

This recipe makes 2-3 servings, so adjust the amounts accordingly if you need to serve more people. You can also customize this recipe by adding other ingredients like saffron, raisins, or coconut to the rabri.
